Installing an Android ROM is something that works as well, but Samsungs are quite difficult to install Android ROMs (I would know, I've done it) on and certain bank/ID apps may not work on an Android ROM. Since it's Samsung you're only ROM options are also most likely just LineageOS and iodéOS (which is based on LineageOS)
https://xdaforums.com/t/guide-magisk-module-universal-systemless-microg-installation-on-stock-android.4686426/ according to this there is a way to install microG on stock Android instead of an Android ROM, but it requires extra stuff since microG uses signature spoofing that isn't supported in official the Android OS
Nevermind it turns out the Note8 is only supported still by the Replicant ROM, but Replicant's development future is uncertain and its most recent version is still based on Android 6
